This time I decided to experiment with a recipe I found on BBC, because if I can make this delicious recipe myself, I could probably be saving a substantial amount of money…

I’m pleased to announce to you that this first try was a monumental success. Details of Lola’s sweet sticky Pork Ribs are below:

Ingredients:

Two Cans of Coke (or any other cola)

One Slab of Pork Ribs

2 tablespoons of sweet chili sauce

8 tablespoons of ketchup

8 tablespoons of brown sugar

2 tablespoons of soy sauce

1 tablespoon of Japanese seasoning oil

3 cups of water

Method:

Step 1: Rinse off the ribs and put them in a pan with the coke and water. Pop them in an oven pre-heated to 160C.

Allow the ribs to cook well until not quite falling off the bone.

I discovered afterwards that you need to slice off the layer of fat before cooking.

Step 2: Mix up all the other ingredients in a pan and simmer for 2 minutes until they bubble up. This recipe was supposed to have Worchester sauce but no thanks to SPAR in Lekki, there isn’t any. The Japanese oil was an improvisation…

Step 3: Bring the ribs out from the oven and pat dry.
