I can\u2019t remember how many times I searched for recipes so that I could also make mine.<br \/>\n<\/em><br \/>\n<em>I&#8217;ll be sharing my own special recipe for people like me who are on a gluten and dairy-free food journey. Healthy living is not easy, but the results are worth it.<br \/>\n<\/em><br \/>\n<em>Anyway, this banana bread is easy to make. The ingredients are things you already have in your kitchen. They can also be easily bought in the store, unlike other gluten-free foods.<br \/>\n<\/em><br \/>\n<em>The best way to eat this is by slathering peanut butter over it or having a nice cup of mint green tea by the side.<\/em><\/p>\n<p><em>I hope you enjoy making this as much as I did during the lockdown.<\/em><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n<em>1 \u00bd (150 g.) cup Regular Plain Oats\u00a0<\/em><br \/>\n<em>2 ripe bananas\u00a0<\/em><br \/>\n<em>2 eggs or 2 tbsp flax seed powder in 1\/3 cup water\u00a0<\/em><br \/>\n<em>1 tsp Vanilla Extract\u00a0<\/em><br \/>\n<em>1\/3 cup (75 ml or 75 g) cooking oil or melted oil\u00a0<\/em><br \/>\n<em>\u00bd cup packed brown sugar\u00a0<\/em><br \/>\n<em>\u00bc cup (60 ml) Almond or Oat milk\u00a0<\/em><br \/>\n<em>1 tsp. cinnamon powder (optional)\u00a0<\/em><br \/>\n<em>1 tsp. baking soda\u00a0<\/em><br \/>\n<em>\u00bd tsp. salt\u00a0<\/em><br \/>\n<em>1\/3 cup chopped almonds &amp; walnuts, coconut flakes &amp; chocolate chips (optional)<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<ul>\n<li><em>Preheat your oven at 350-degree Fahrenheit \/180-degree Celsius.<\/em><\/li>\n<li><em>Prepare your baking tray, oil the pan. You can even go a step further to line your baking pan with oiled foil or baking paper.<\/em><\/li>\n<li><em>The next step is to prepare the wet ingredients. Mashup the very ripe and sweet bananas in a bowl with a fork.<\/em><\/li>\n<li><em>Break the eggs into a large mixing bowl, add the vanilla extract, and then whisk the mixture till it is fluffy. This process should take at least 2 minutes.\u00a0<\/em><\/li>\n<li><em>After beating the eggs, add the cooking oil (I love to use olive oil), add the sugar, then combine all ingredients together.\u00a0<\/em><\/li>\n<li><em>Once it is properly combined, add the mashed bananas, and mix it in very well.\u00a0<\/em><\/li>\n<li><em>Add your dairy-free milk to the mixture and whisk again till it is properly combined. Your good ingredients are ready now.<\/em><\/li>\n<li><em>For the dry ingredients, you can blend your regular rolled oats or you can use the already ground oats.\u00a0<\/em><\/li>\n<li><em>Add your cinnamon powder, baking soda, salt and mix in a bowl.\u00a0<\/em><\/li>\n<li><em>Add your chopped almonds, walnuts, coconut flakes or chocolate chips.\u00a0<\/em><\/li>\n<li><em>Gently add the dry ingredients to the wet ingredients and mix till they are properly combined.<\/em><\/li>\n<li><em>Transfer into the baking pan and put in the oven to bake for 50 \u2013 60 minutes.<\/em><\/li>\n<li><em>Once baked, bring it out of the oven and leave to cool for 15 minutes before slicing it up.<\/em><\/li>\n<\/ul>\n<p><em>Enjoy!\u00a0<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Everyone, well, almost everyone I know was obsessed with baking banana bread during the 2020 lockdown.
