Right around 2007, my now sister-in-law was experimenting in the kitchen at my brother\u2019s apartment with her grandmother\u2019s cookbook trying to make something she called a \u201cBlondie\u201d (she\u2019s Greek by the way, so I was very much excited to learn this new thing).<\/p>\n

 <\/p>\n

We finished the first batch before it left the kitchen so she had to make a second. With some cold milk, the second batch went down equally as fast. It was sweet, it was gooey in the middle, it was literally sugar and spice and everything nice.<\/p>\n

 <\/p>\n

So when I was asked to make a dessert, this was the first thing that came to mind; well second after \u201cdeath-by-chocolate\u201d. I found a not-so-greek recipe online that mimicked the Greek recipe and hereby share below:<\/p>\n

Ingredients:<\/strong><\/p>\n

\uf0b7\u00a0 1\/2 cup of butter, melted<\/p>\n

\uf0b7\u00a0 1 cup of tightly packed dark brown sugar<\/p>\n

\uf0b7\u00a0 1 egg, lightly beaten<\/p>\n

\uf0b7\u00a0 1 teaspoon of vanilla<\/p>\n

\uf0b7\u00a0 1\/2 teaspoon baking powder<\/p>\n

\uf0b7\u00a0 1\/8 teaspoon of baking soda<\/p>\n

\uf0b7\u00a0 Pinch of salt<\/p>\n

\uf0b7\u00a0 1 cup of all-purpose flour<\/p>\n

Steps:<\/strong><\/p>\n

1<\/strong>\u00a0Preheat the oven to 350\u00b0F. Lightly butter and flour an 8X8 pan. Whisk together the melted butter and sugar in a bowl.<\/p>\n

2<\/strong>\u00a0Add the egg and vanilla extract and whisk.<\/p>\n

3<\/strong>\u00a0Add the flour, baking soda, baking powder, and salt, mix it all together. Add the butterscotch chips or other mix-ins.<\/p>\n

4<\/strong>\u00a0Pour into the pan and spread evenly. Bake for 25-30 minutes or until a tester inserted into the center\u00a0comes out clean. Allow to cool.<\/p>\n
